The chef Cyril and his wife Janine, opened the restaurant Abricotier in Mérida. They left Quebec where they had two restaurants for 9 years, to come and settle in the Yucatán peninsula.
The chef prepares gourmet hamburgers inspired by French and Quebecois cuisine. He lived there for 20 years.
The recipe of his famous brioche bun and his poutine sauce that he prepares himself are kept secret. The preparations are made by hand at the restaurant.
